On March 22nd, we had the honor of being on the Tast Vertical program of Catalunya Ràdio, where, along with Empar Moliner, we shared the secrets behind our wines aged under the sea. It was a unique opportunity to talk about our passion for wine and the innovations we are carrying out at La Botera.

In the program, Francis Villarroya, one of the partners of the winery, and Ivette Alonso, our winemaker, joined us to present two of our most special wines: Mar de Batea and S’Àmfora Mudèfer, which have been aged in the depths of the sea. Along with Xavier Belda, a merchant sailor and head of S’Àmfora, we discovered the wonders of underwater aging, a process that adds a unique complexity to our wines.

We also had the opportunity to share the table and a glass with Ton Rimbau, a viticulturist and producer of Porcellànic, a natural wine made with minimal intervention, which, like ours, undergoes an aging process in water, in this case, freshwater. It was fascinating to see how, despite the differences in the process, the respect for the product and nature is what truly unites all of us who work with wine.

The program was completed with a tasting in which we compared one of the harvests of these wines with its “terrestrial” version, that is, aged in the conventional way. And it was fascinating: the mineral and salty nuances of the wines treated under the sea were unmistakable.
