We’re thrilled to share that Diari de Tarragona has published a feature on one of our most unique and exciting projects: S’Àmfora Mudèfer, our wines aged under the sea.
This article highlights the uniqueness of underwater aging, a technique that combines tradition, innovation, and the sea’s transformative power. In collaboration with Xavier Belda, we embarked on this adventure that led us to submerge our amphorae filled with White Grenache (S’Àmfora Mudèfer White) and Carignan and Red Grenache (S’Àmfora Mudèfer Red), sourced from the oldest vines of the Mudèfer estate.
For nearly 12 months, the wine rests 10 meters deep in the Badia del Fangar, gently rocked by the currents and lunar cycles. The result is a wine with a surprising evolution, refined structure, and aromatic complexity that is difficult to achieve through traditional aging methods.
